The unquestionable love and celebration of good food has been bringing people together for many years, and when we think of good food, one of our most loved preparations comes to mind &#8211; the quintessential Dal.<\/p>\n\n\n\n<p>From Dal Makhani to Panchratna Dal, it is the undying love for this flavoursome and versatile staple that most Indian households include in our daily diet. And each region in the country has its own favourite way of preparing them.<\/p>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Sambhar<\/strong><\/h2>\n\n\n\n<p><em>Vegetables &amp; Lentil stew<\/em><\/p>\n\n\n\n<p>Sambhar is said to have originated in the kitchen of the Thanjavur Marathas ruler Shahji during the 17th century, in the South Indian state of Tamil Nadu. Shahji named it sambhar after Sambhaji, the second emperor of the Maratha empire, who was the guest of the day at a feast he held.<\/p>\n\n\n\n<p>Sambhar is a South Indian lentil and vegetable stew which is served with Idli, Dosa or steamed rice. It is a popular traditional South Indian dish packed with protein and nutrition.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/ox7.ee3.mytemp.website\/wp-content\/uploads\/2021\/01\/Sambhar-1024x768.jpg\" alt=\"Sambhar\" class=\"wp-image-28344\" srcset=\"https:\/\/ox7.ee3.mytemp.website\/wp-content\/uploads\/2021\/01\/Sambhar-1024x768.jpg 1024w, https:\/\/ox7.ee3.mytemp.website\/wp-content\/uploads\/2021\/01\/Sambhar-510x383.jpg 510w, https:\/\/ox7.ee3.mytemp.website\/wp-content\/uploads\/2021\/01\/Sambhar-300x225.jpg 300w, https:\/\/ox7.ee3.mytemp.website\/wp-content\/uploads\/2021\/01\/Sambhar-768x576.jpg 768w, https:\/\/ox7.ee3.mytemp.website\/wp-content\/uploads\/2021\/01\/Sambhar.jpg 1080w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure><\/div>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00be cup Yellow Pigeon peas (Toor Dal)<\/li><li>1-2 tbsp tamarind pulp (1 tbsp seedless tamarind + 4 tbsp hot water- Soak for about 20 minutes. Squeeze the tamarind pulp from the soaked tamarind and keep aside)<\/li><li>1 tbsp jaggery (optional)<\/li><li>\u00bc tsp turmeric (skip if sambhar powder already has it)<\/li><li>\u00bd tsp chilli powder<\/li><li>\u00bc cup coriander leaves<\/li><li>Salt to taste<\/li><\/ul>\n\n\n\n<p><strong>Vegetables:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 medium onion, chopped<\/li><li>1 large tomato, chopped<\/li><li>1 small carrot, diced<\/li><li>1-2 vegetable drumsticks (8-10 pieces moringa)<\/li><li>2-3 okra<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>For tempering:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 tbsp oil\/ghee<\/li><li>10-12 curry leaves<\/li><li>\u00bd tsp cumin seeds<\/li><li>\u00bd tsp mustard seeds<\/li><li>1 pinch fenugreek seeds<\/li><li>1 pinch asafoetida<\/li><li>1-2 dried red chillies<\/li><li>2 tbsp Sambhar powder<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Wash the Dal well and soak for an hour. Drain the water and add the dal to a medium-sized pan along with 4 cups of water. Boil well until fully cooked.<\/li><li>Heat the oil in a pan. Add onions and saute for 1 min and then add tomatoes. Add all the vegetables. Saute for 2 mins and add 5 cups of water.<\/li><li>When the vegetables are cooked al dente, add turmeric, sambhar powder, tamarind pulp, jaggery and salt. Cook for 5 mins and stir in the boiled dal.<\/li><li>In a separate pan heat oil for the tempering. Add cumin, mustard, fenugreek, curry leaves and red chillies.
